TEXAS-STYLE SMOKED BEEF BRISKET -                                                         

Our Texas-style smoked beef brisket has been hand rubbed with our spicy meat rub then smoked for 15-20 hours. Served on Slider Buns with our Handcrafted Barbeque Sauces. Carver recommended.

SOUTHERN-STYLE SMOKED PULLED PORK -                                               

Our Southern-Style Pork Butt has been hand rubbed with our spicy meat rub, smoked for 15 – 20 hours then hand pulled. Served on Slider Buns topped with Cole Slaw and our Handcrafted Barbeque Sauces.

GLAZED PIT SMOKED HAM -                                                                                       

Our in-house smoked pit ham is basted with a mustard-brown sugar and spice glaze then slow-smoked for several hours. Topped with Bourbon–Pecan Praline Sauce or a Nutty Cinnamon-Apple Rosemary Sauce. Served on Slider Buns. Carver recommended.

SMOKED CRANBERRY-APPLE PORK TENDERLOIN -                                 

Rosemary, herbs and spice rubbed then slow-smoked until tender and moist. Glazed with our Spiced Cranberry-Apple Port Wine Glaze. Served on Slider Buns. Carver recommended.

SMOKED COWBOY RUBBED PORK TENDERLOIN  SAUTE -                    

Hand rubbed with our Spicy Cocoa and Coffee Rub then slow-smoked until tender and moist. Medallions are sauteed on a large cast iron skillet. Served on Slider Buns with our Handcrafted Barbeque Sauces. Sauté Chef recommended.

SMOKY BAR-B-QUED BUFFALO SIRLOIN ROAST -                                        $Market

Mustard and herb crusted and slow-smoked until tender and moist. Served on Slider Buns with our Handcrafted Barbeque Sauces.

SMOKED WHOLE NEW YORK STRIPLOIN OR PRIME RIB ROAST-  each roast serves 50-60 people

Black pepper and herb crusted and slow-smoked until tender and moist. Served on Slider Buns with our Creamy Horseradish and Smoky BBQ au jus

RASPBERRY-CHIPOTLE SMOKED TRI-TIP ROAST -                                    

Hand rubbed with seasonings and spices then slow-smoked until tender and moist. Served on Slider Buns with our Handcrafted Raspberry-Chipotle Sauce.

WHOLE SMOKED PIG (avg. 60-65# serves 60-100) -                                    

Traditional, Kahlua, Cajun, Caribbean or Barbeque with Slider Buns our Handcrafted BBQ Sauces. Stuffed Whole Pig also available. Call for information.

HOLIDAY GOURMET BARBEQUE SLIDER BAR -                                           

Chopped Smoked BBQ Brisket, Carolina Style Pulled Pork, Chipotle Smoked Chicken, Peppered-Bleu Cheese Mayonnaise, Mango Salsa, Smoky Grilled Sweet Peppers and Onions, Big River Cole Slaw served with l’il bitty Slider Buns.
