HISTORY OF LUAU

In old Hawaii a luau meant a lavish food extravaganze to fete royalty, foreign dignitaries, powerful chieftains, or hundreds of guests at important weddings, christenings or birthdays. Luaus often lasted for days an drequred an incredible amount of preparation. Guests sat on mats on the ground, with food pile high in calabash bowls in front of the them. They ate a bit, danced a bit , drank a little and sang a lot. A rollicking shared experience... a feast of aloha.

LUAU ENTREES
KAHLUA PORK - Rubbed with Hawaiian spices and smoked for 18-20 hours. (Add a whole pig to this menu!)

HULI HULI CHICKEN - Smoked bone-in chicken pieces with sweet, fruity Hawaiian Bbq Sauce

HAWAIIAN STYLE SMOKED SALMON - with coconut, pineapple, Hawaiian Terriyaki and brown sugar brine. Add: $3.50 per person

SIDES
SMOKED SWEET POTATO BAKE with macadamia nuts and topped with toasted coconut

ISLAND COLESLAW with pineapple

WHITE RICE

FRESH TROPICAL FRUITS (seasonal)

LOMI SALMON (salt salmon, tomatoes, onion) - Add: $2.00 per person

CARIBBEAN PORK -
shredded pork seasoned with a spicy blend of red and black pepper, allspice, thyme and cinnamon. All flavors that are characteristic of Caribbean foods.  (Add a whole pig to this menu!)

BAR-B-QUED CHICKEN - with a slightly spicy herb, spice & lime rub.

CHILI-RUM SMOKED SALMON - flavored with brown sugar, dark rum and red chilies. Served at room temperature. (Add: $3.50 per person)
